In a city of cafés, Sant Eustachio provides that rare beast: a unique cup of espresso.
Although Romans traditionally take their coffee black and unsweetened, it’s the sugar as much as the coffee itself that has earned Sant’Eustachio its reputation. Their trick is to add it while the coffee is brewing, rather than afterwards, though the exact technique is a secret: special screens shield the process from prying eyes.
That said, the coffee at Sant’Eustachio shouldn’t be dismissed as nothing more than a novelty: with or without sugar, it’s very high quality, and they even now sell their blend both in Italy and abroad. Their speciality is the Gran Caffe Sant’Eustachio, a thick and creamy double espresso.
